mike’s sweet and spicy steak papaya salad

ingredients

  • 5 cloves garlic, minced
  • 5 chili peppers, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 3 tablespoons honey
  • 1/4 cup peanut oil
  • 4 8 oz. flank steaks
  • salt and pepper
  • 1 shallot, diced
  • 1 tablespoon chopped fresh mint
  • 1/2 cup rice wine vinegar
  • 2 tablespoons fish sauce
  • 3 teaspoons sugar
  • 1 large romaine lettuce head
  • 1 large green papaya, peeled and sliced
  • 2 carrots, peeled and sliced
  • 1/4 cup of roasted peanuts
  • chopped cilantro to garnish

 

directions

in a food processor combine the garlic, 2 chilies, soy sauce, limejuice, honey, and peanut oil. marinate the flank steaks with this mixture for four hours or overnight.

grill the flank steaks on medium high heat until medium rare. in a small bowl, combine the shallot, remaining 3 chilies, mint, vinegar, fish sauce, and sugar. whisk well and set aside. place the chopped lettuce leaves on a serving platter and add on the diced papaya and carrots. now that the flanks steaks have cooled slightly, slice thinly and arrange on top of the lettuce.  pour the dressing on top and garnish with peanuts and cilantro.
